The Spanish conquerors dismissed the potato as the ‘Bread of the Indians’. They thought that if the indigenous populations were to become ‘civilised’ like the Spanish, they had to eat more cheese, less tubers. Even when their attempt was not successful, this devalued potatoes’ nutritional and cultural value.
